This pasta dish is a genuine Italian classic, sinfully rich and full of luxurious, creamy goodness. It is quick and easy to prepare for that romantic dinner, meaning you don’t have to spend ages in the kitchen getting messy, and looks amazing on the plate when accompanied by a simple salad of tomato, red onion and thinly sliced yellow peppers. A feast for the eyes and the stomach, and a wonderful way to reach anyone’s heart at any time!

Ingredients

150g Tagliatelle Verdi
1 large, top quality Chicken breast fillet
1 small head of broccoli, cut into florets and blanched
1 glass white wine
100ml double cream
2tsp Cuban seasoned salt
2tsp Champignon crumbs
1tsp Garlic powder
1tsp Tomato and Basil salt
freshly grated nutmeg
good grate of black pepper
handful of freshly grated Parmesan/Grana Padano/Pecorino cheese (any of these is good, pick your favourite!)

Method

  • First season the chicken fillet with the Cuban seasoned salt, and grill until done. Let the chicken cool, then cut into 1in thick slices, and leave to one side.
  • Now cook the pasta until just al dente, bearing in mind it will be cooked a little further in the sauce – overcooking the pasta in this dish is definitely a sin! Drain the pasta and rinse with cold water, then again leave to one side.
  • When it is time to bring the dish together, melt the butter in a deep, heavy frying pan which is big enough to hold all the ingredients. Add the sliced chicken and the blanched broccoli and stir, then add the white wine and cook on a high heat to burn off the alcohol (about a minute).
  • Next add the champignon crumbs, garlic powder and tomato and basil salt, stirring all the time, before adding the pasta and making sure it is well mixed with everything else.
  • Still on a reasonably high heat add the cream, stirring vigorously until the pasta is well coated with it, and finally chuck in the cheese, still stirring all the time, until it melts. Finally grate in the nutmeg and black pepper, and your Alfredo is ready!
  • This dish is best washed down with a good bottle of Gavi (one of Italy’s very best wines), and a side of Garlic Bread made with our Brushcetta mix is highly recommended. It does no harm to look out of the window at this point, and if the moon’s in the sky like a big pizza pie – well, with Alfredo for supper, that’s amore!!
