A beautifully tasty and simple Spanish recipe given an extra bit of Christmas zing with our Peruvian Spice blend, this is perfect Winter food and best served simply with some nice crusty bread, and maybe a nice bowl of Patatas Bravas on the side. Feliz Navidad!

Ingredients

2 tins chickpeas
1 large onion, chopped
4 cloves garlic, chopped
2 carrots, thinly sliced
2 tomatoes, chopped
4 red peppers, chopped (if you can get hold of tinned Piquillo peppers, these work absolutely perfectly, but regular peppers are fine)
500g chorizo sausage, cut into largish chunks
4tsp Peruvian spice blend
3 tsp sweet smoked paprika
4tsp dried parsley

Method

  • Saute the onion, garlic, carrot, tomato, red pepper and chorizo in 2 tbs olive oil for 10-15 minutes, until the veg has some colour, the chorizo is crisping a little and the oil has taken on a red colour.
  • Add the Peruvian blend and paprika and stir well, then add the parsley and enough water to give the dish a soupy consistency.
  • Now simmer the stew for half an hour or so, until the sauce has thickened but still has that soupy character.
  • Serve in deep bowls, garnished with a handful of chopped flat leaf parsley.
