This beautiful recipe comes from Louisiana, USA, and is one of the tastiest things that can be done with chicken. Sharp with tomato, zingy with chilli and lime and sweetened by the Deep South ‘Holy Trinity’ of onion, green pepper and celery, it is pretty quick to prepare and will vanish from everyone’s plates even faster!

Ingredients
12 chicken thigh fillets
1tbsp onion powder, diced
2 green bell peppers, diced
2 sticks of celery, diced (2tsp Celery Powder can be used instead)
2 tsp garlic powder, chopped
2 cans chopped tomatoes
4tsp Cajun Seasoning
2tsp Tomato Powder
1tbs Thyme
2tbs lime juice
1tsp tabasco

Method
- Heat some olive oil in a pan and add the vegetables, frying gently for five minutes. Next add the chicken thighs and carry on frying till they are nicely browned.
- Now add the herbs and spices, frying for a minute more before adding the tomatoes, the lime juice and the tabasco. Cook for a further 15 minutes or so, until the chicken is thoroughly cooked.
- Serve accompanied with steamed rice, a baked potato or if you have the time, some home-made potato wedges dressed with Cajun Seasoning.
