Ingredients

2 tbsp oil
1 onion, chopped
2 garlic cloves, crushed
1 small piece fresh root ginger, grated
2 tsp Spice Mountain Chickpea Spice
1 can chickpea, drained and rinsed
2 large fresh tomatoes, chopped
1 bunch fresh spinach (optional but adds a nice touch)
fresh chillies (optional)

Method

  • If using spinach, cook first in boiling for a couple of minutes then drain out the excess water. Chop coarsely.
  • Heat the oil over medium heat and cook the onion, garlic, ginger, chilli and spices for a few minutes.
  • Add the chickpeas and tomatoes, adjust seasoning and simmer on low heat for 15 minutes. You may need to add a small amount of water if required.
  • Stir in the spinach, mix thoroughly and serve.
