Ingredients

Cauliflower (can be substituted with green beans, okra etc…)
Potatoes, cut into cubes, par boiled
2 tsbp vegetable oil for frying
1 tsp panch puran (bengali 5 spice)
Green chillies
1/2 tsp turmeric
1/2 tsp amchur (optional)
Salt to taste

Method

  • Parboil the potatoes in lighly salted water for 10minutes, drain and set aside. Fry the oil until hot then add the spices.
  • When the seeds start to pop, immediately add all other ingredients and saute. Cover and cook until the vegetables are cooked to your liking, stirring every now and again to stop the seeds from burning.
  • Add a little it of water if necessary. Season to taste
