Ingredients

1 tbsp veg or sunflower oil
600g raw jumbo prawns (shells removed or leave some with their tails on if you prefer)
1 large onion, finely chopped
3 garlic cloves, crushed
thumb size piece ginger, peeled and grated
2-3 tsp spice mountain sri lankan spices
400ml (1 can) coconut milk
1 stem lemongrass bruised
squeeze of lemon juice
salt & pepper to taste

Method

  • Heat the oil in a heavy pan and add the onion, garlic and ginger. Saute until the onion becomes soft then add the ground spices.
  • Keep frying and stirring until the mixture develops a good aroma (add a splash of water if it starts to stick).
  • Add the lemongrass and coconut milk (do not cover) and bring to a simmer over low heat for 10 minutes, then add the prawns and simmer for a further 10 minutes or until the prawns are cooked. Adjust seasoning and squeeze over some lemon juice.
