This is such a delicious, summery salad which combines the earthy, slightly aniseed flavour of chicory with sharp, zesty and fruity orange. It’s a pretty simple recipe as it stands, but we’ve added an extra special ingredient to the mix in our beautiful Calabrian Fennel Pollen, an ingredient so luxurious and exotic you could bathe in it! Beside the luxury, it brings an extra splash of sunshine into an already summery dish. The salad is great as a side dish, especially if the main dish is rich as the sweet zest of the orange will cut through that.

Ingredients
3 Orange, peeled and separated into segments
2 large heads Chicory, torn into leaves
50g Lambs Lettuce
100g Watercress
2tbs Orange Juice
2tsp Spice Mountain Orange Zest
2tsp Honey
50ml Extra Virgin Olive Oil
2tsp Calabrian Fennel Pollen

Method
In a bowl or dish, place and arrange the chicory, leaves and orange segments. Make the dressing by mixing together all the other ingredients except the Fennel Pollen, then pour the dressing over the salad and mix. Finally, sprinkle the Fennel Pollen over the finished salad, and serve.
