About this product

Madras is one of the most well-known curries in the West, having been a restaurant favourite since the 1970s. The name comes from the city in the South of India, which is nowadays known as Chennai.  The mix is a hot and spicy blend of some of the most aromatic Indian spices, which includes black pepper, chilli, allspice and cloves among others. It can be prepared with meat, chicken or seafood, although in Chennai itself it would usually be made with vegetables due to the Hindu culture of the area. For something deliciously different, try making it with rabbit!

Mixing the ground spices with coconut or yoghurt will temper the heat of the curry, and also this method makes a lovely marinade when fresh crushed garlic and lemon juice are added. Otherwise, the blend works best when used in a tomato-based dish. This is the perfect everyday curry powder for those who like their curries with a touch of fire!
