Lebanese cuisine has become one of the most popular in London these days, both for dining out and for preparing at home. It is characterised by fresh, lively flavours with a liberal use of spices and herbs, and this blend of seven spices including cumin, black pepper, cloves and nutmeg is the definitive Lebanese blend for use in a wide range of dishes. It is similar to the Arabian baharat, and gives a rich aromatic note to anything it is used in, while also giving warmth and depth to dishes. In Lebanon it would be used as an all purpose seasoning, and it is particularly effective used to season beans, pulses and lamb dishes. In Western cooking 7 spice can be used to give an exotic note to a beef stew or as a rub for meats which will be grilled or fried, and is really good when added to lentil or vegetable soups.
