This mild, fruity chilli powder is made by grinding Anaheim chillies, which were brought to the Southwest USA by a Mexican farmer at the turn of the last century. It is very commonly used in the food of the area, used as an all-purpose chilli powder in chilli con carne, barbecue sauces and most ‘Tex-Mex’ dishes. Full of flavour, it gives colour and depth to a dish, as well as a gentle, fruity heat which will not overpower. Its mildness makes it excellent for using in dry-rubs and marinades, and it works particularly well in salsas and tomato sauces, such as those for burritos and tacos. One of our favourite ways to use this New Mexico powder is to season Huevos Rancheros, the classic Tex-Mex breakfast dish.
