Chamomile flowers come from a plant which resembles the daisy and has a lovely aroma which is heavily redolent of apples, and there is a distinct apple note to the flavour of the flower too. It is traditionally used in herbal teas, due to its calming and healthy nature, but like other edible flowers it can be used in many other ways too – it is great in cocktails, particularly ones including gin or vodka, and it can be used to infuse ice cream or sorbet with a crisp and vibrant taste and aroma. When used in desserts generally it has a great affinity with vanilla – try combining the two to take an apple pie or crumble to the next level!
