Guajillo chilli powder is made by grinding the dried Mirasol chilli, producing a powder which has a smoky, sweet, citrussy and warm flavour. The guajillo is very commonly used in Mexican cuisine, and it can be used in any dish which needs a deep chilli flavour but not too much heat. It works particularly well in tomato based dishes, balancing well with the acid they contain.
One of our favourite ways of using guajillo is to mix it with oregano, ground coriander, salt and pepper and then use as a dry rub for chicken, pork or fish. And due to its mild heat it is perfect for general use, livening up sauces, soups, stews and casseroles.
