Apart from its lovely colour, carrot powder is a great way to include the sweet, earthy flavour of carrots in your cooking. It can be used anywhere you would use fresh carrots, and it is particularly good added to juices and smoothies. It will beef up a carrot cake, and works really well to temper and balance spices, for example when added to the spice blend for a Japanese katsu curry. Mixed with celery salt, it will give you the base flavour for an incredible range of dishes ranging from a ragu bolognese to a lentil soup. We can’t promise it will help you see in the dark, but carrot powder will definitely brighten up your cooking!
