These are the same variety of chilli used for the famous tabasco sauce, but in this case the peppers are picked and dried when unripe, thus the yellow colour rather than the red. They are as hot as the sauce, and have a distinct fruity sourness when rehydrated. They can be used anywhere a strong background heat is needed, and they are particularly good in pickles and chutneys due to that slight sourness. One of our favourite chillies at the moment, they are also quite versatile – try rehydrating and then chopping them up into cream cheese for a smooth but fiery sandwich filling. Also just adding half a dozen whole yellow tobascos to any curry will give it a distinctive and unique flavour, especially one where lemon, lime, tamarind or vinegar feature.
