Sambar is a soupy, lentil based vegetable curry which is commonly served alongside Biryani, and in south India alongside Masala Dosa or Idli. Its flavour tends to be sharp and slightly tart, and it can often contain a ‘souring’ ingredient such as tamarind or lime juice. The other flavour which is pronounced in a Sambar is black pepper, and in south India the dish will usually include curry leaves. All of the flavours tend to cut the richness of a Biryani, and Sambar certainly helps the digestion of rich foods. Our choice of veggies in a Sambar include carrots, green beans, finely chopped white cabbage and if we have some the Indian vegetable drumstick. It is lovely enjoyed just as a soup, with some roti, parata or chapati for dipping, and if you add more veg and make it thicker, it is very good with plain steamed rice.
