Truly, there is something here for everyone, whether you are a lover of chilli flavour or chilli heat! For those who don’t like too much heat, there are many chillies which can bring the same gifts without the fire, and which can transform your dish into something truly special. They add a wonderful array of flavours and aromas to different kinds of foods. Mexican chillies such as Ancho, Cascabel, Guajillo and Anaheim are relatively mild, and are suitable even if you do not normally like hot food. These chillies are primarily used to impart fruity, chocolatey or smoky flavours to dishes, and have a gentle heat which will not overpower. These are perfect in chilli con carne, any tomato based sauces, salsas, not to mention Mexican dishes in general. Of course this section also has everything that could be required for lovers of blastingly hot food – Carolina Reaper, Scorpion and Naga are the Daddies here!
If you love the flavour of chilli in your food but still wish to reduce some of the heat when using one of the hotter chilli powders, simply blend in some mild paprika until you achieve the desired heat level.
Always use chillies sparingly even you are a chilli addict like myself. It is always best to add a small pinch to begin with, then add more later if more heat is required.
