This South American chilli gets its name from its bright yellow colour (Amarillo is Spanish for yellow), and it is the most popular chilli used in Peru. When dried, it takes on a distinctive dark orange colour and a fresh fruity flavour, giving a heat on the mild side of medium.
In Peruvian cuisine, Aji Amarillo chillies form the base of many traditional recipes, in which the chilli is blended with other fresh ingredients such as garlic, onion, lime juice and herbs.
Because of its delicious flavour and mild heat, it finds its way into every type of dish, ranging from soups and sauces to bean and vegetable dishes, and they are also used to make dips and marinades. A marinade made with Aji Amarillo goes especially well with chicken or seafood, and it is particularly good when used to give ceviche (marinated fish) a fruity kick.
