Also known as ‘Hing Powder’ this is an Indian spice used to flavour pulses/dahl, vegetable dishes, chutneys and pickles. It imparts a strong onion-garlic flavour to Indian dishes and is also added to many spice blends. To bring out the full flavours of this spice sautee/fry in oil with some mustard seeds, then pour over lentils or other dishes. A pinch of hing goes a long way and it should be used sparingly. It is an essential spice to have in the cupboard if you love cooking Indian food. This powder is blended with fenugreek which gives it an enhanced flavour.
