We have taken the traditional Middle Eastern Dukkah and given it an Outback makeover by blending its mix of herbs, spices, nuts and seeds with indigenous spices from Australia such as roasted wattleseed and lemon myrtle. Serve this with chunky fresh bread and fruity olive oil. It is also great sprinkled over vegetable dishes or salads, or used as a crust on chicken or fish before grilling or pan-frying.
