Sesame is one of the oldest seeds known to man and is commonly used in Chinese & Japanese cuisines. Unlike the nutty flavour of white sesame seeds, black sesame have a slightly more bitter flavour. The seeds can be toasted first either in a frying pan or baked in the oven until they become brown and fragrant. When a recipe calls for white or black sesame seeds, often it is more over a matter of appearance than flavour. The seeds can be sprinkled on breads, pastries, in salads or rolled onto a piece of fish or meat before cooking for a crunchy coating.
