The first thing you hear if you happen to be on a train in India is the man calling, ‘Chai chai chai!’ Masala Chai (spiced tea) is India’s favourite brew, and is emerging as the next trend in specialty teas in the Western world. It is a wonderfully fragrant blend of exotic spices which is normally infused in lots of milk and sugar – the extra sweetness really brings out the full flavours of the spices. If possible, boil water, milk and half tsp of the ground spice mix for 5 mins then add sugar (to make 1 cup of tea). The longer the brew the better the taste. Strain through a sieve before serving. Key notes are cardamom, cinnamon, cloves, ginger and pepper. Chai is a brilliant comfort drink and a delicious alternative to regular tea or coffee.
Be careful, as a little of the spice goes a long way – using too much can be overpowering. When made in the right balance, this authentic chai spice will make you feel as if you are on that train speeding through India!
