Clove is a dried flower bud which comes from the highly aromatic tropical evergreen tree of the same name. This sweet-smelling spice is used in many cuisines worldwide as well as in many spice mixtures; garam masala, Moroccan Ras el Hanout, Chinese five spice and French quatre epices to name just a few. Another country where cloves are used alot is Greece, where they are added to the rich, wine-based stews which are popular there
Ground cloves have a stronger and more pungent nature than whole, and should be used in moderation. However it is the easiest way to gain the benefit of cloves, and is perfect for use in chai mixes, marinades and slow-cooked stews and casseroles. Ground cloves are also an essential flavour in some desserts.
