This mix of chervil, chives, tarragon and parsley is a classic French herb mix. It can be used to give a lovely summery feel to all sorts of dishes, either added towards the end of cooking or simply sprinkled over the finished dish. It is particularly good used with white meats and fish, and of course is an integral part of the classic French Omelette aux Fine Herbes.
