These small dark purple berries are well known as the principal flavouring in gin but they are also used in cooking. They are especially popular in Italy and France where they are used to flavour rich game dishes. They are a traditional ingredient in the German dish ‘Sauerkraut’ and go especially well with cabbage. Crushed Juniper Berries are great in pates, marinades and rich red wine sauces. Juniper berries also go well with salmon and pork if used in moderation. It is recommended to crush the seeds lighly in a mortar and pestle to release their flavours before use.
