Satay is one of the most popular and delicious of all Asian ‘street food’ meals. Skewers of chicken, pork or beef are marinated with spices and soy sauce, then grilled. And then they are coated in a wonderfully nutty, sweet and spicy sauce. This blend is ideal to make the marinade, and the sauce – simply add a few teaspoons of satay spice to two tablespoons of crunchy or smooth peanut butter, then add some coconut milk (or just water as there is already coconut powder in this blend) and finally a dash of soy sauce and cook to a thick, creamy consistency. If you have it to hand, use peanut oil or sesame oil to enhance the nutty characteristics.
Every element of flavour is contained in this mix, from hot to sweet, and it is genuinely delicious! Traditionally served with sliced cucumber as a garnish to give some crunch to the dish, it makes a perfect snack or barbecue food, and when accompanied by some steamed Jasmine rice it makes a great lunch or supper.
Satay is also one of the ideal ways to introduce kids to spicy foods – after all, which child does not love peanut butter?!
