This is the ground yellow mustard seed which is the basis of the mustard powder you find in the supermarket, although the popular brands always include flour/cornflour as a bulking/thickening agent. Our ground mustard seed contains no additives at all, so what you get is pure mustard colour and flavour, zingy and pungent. You can use the ground seeds to make your own mustard, by adding vinegar and other spices/flavourings as you fancy – there are literally dozens of variations, as is evident from the range displayed on the mustard shelves in shops and delis. A classic English mustard is the most simple of these. Mustard powder can also be used to pep up so many things, from soups and stews to mayonnaise and cheese sauce. Definitely a pantry essential!
