Yellow mustard seeds are milder than brown mustard seeds.  Both yellow and brown seeds are blended to make English mustard.  Make your own homemade mustard by first soaking the seeds in water or wine vinegar then blending into a smooth paste and lastly adding your favourite herbs and spices for a unique taste.  Yellow mustard seeds can be added to many dishes by toasting the seeds to make them nutty and less fiery. Another delicious way of using mustard seeds (whether brown or yellow or a mixture of both) is by making a lovely mustard crust using Salmon or Chicken.  Tip some seeds onto a plate, press the meat of your choice into them, tap off any excess and fry in a bit of oil or bake until it is crisp and golden.
