This lovely Indonesian style seasoning is a traditional rice dish cooked with coconut and turmeric hence the name Nasi Kuning- simply meaning ‘yellow rice’. In Indonesia the rice is usually served in the shape of a cone and eaten at special events. The yellow golden rice, which looks like a pile of gold, is served on special occasions as a sign of good fortune and wealth. It is served with a variety of side dishes like fried chicken, potatoes, shredded omelette and relishes.
I find that the yellow rice compliments any curries, stir fries or salads.
You can either add a tablespoon of the spice to 1 cup of rice during the cooking process or simply stir it into the cooked rice. You can also add 1/4 cup of coconut milk to the rice for a more velvety texture.
The smell and flavour of jasmine rice best suits this dish.
