This wonderfully fragrant rose water, from the market leader Mymoune, is an essential element of cooking from India, through the Middle East and across to North Africa. Its main use is in sweet dishes, and its flavour and aroma will be familiar to anyone who enjoys the sweets popular in these regions. In the Middle East it is also used in certain savoury dishes, such as when adding to Persian-style rice dishes. It can be used as a substitute for the rose petals which form part of many spice blends from these areas, although it should be remembered that its flavour and aroma are much more powerful – a few drops is usually all that is required. It can also be used in jam, and works particularly well matched with strawberry, and it can be added to tea or simply to water for a refreshing drink. Finally, it is much used in cocktails or as an aromatic in simpler alcoholic drinks, such as vodka.
