This distinctive herb has a slightly peppery taste with a hint of thyme, and matches particularly well with ‘light’ meats such as chicken, turkey, pork and rabbit. It also works very well with beans and pulses, and has an affinity with mushrooms, especially when cooked in a creamy sauce. While it is suited to slow-cooked dishes, it does lose its flavour if cooked for too long so it is best to add it in the later stages of cooking to preserve its taste and aroma. It is said to be beneficial for digestion, and it is also thought to have antiseptic properties.
