Sesame seeds are widely used in bakery goods. Salads, stir frys and noodles can benefit from the nutty flavour sesame seeds produce. The small seeds are also found in a number of spice mixtures such as Egyptian dukkah, Middle Eastern za’tar and some Japanese blends. It is recommended to toast the seeds lightly to bring out their nutty flavour before mixing with other ingredients. Goes particularly well with chicken and seafood.
To toast, simply place seeds in a heavy base frying pan, place on the hob and heat for a couple of minutes, shaking the pan frequently so the seeds don’t burn.
