Chipotle is a smoke-dried jalapeno, but unlike its more well known variety, the morita, the meco is light brown in colour, similar to a dried tobacco leaf. It is much less common than the morita, but often considered superior due to the fact that it is smoked for longer, which gives it a stronger smoke flavour and also more balance. The process also removes more moisture, giving it a slightly different texture, not quite so leathery.
It is a reasonably strong chilli but not too hot, and works best when used whole, added to a slow-cooked stew or chilli to give it a very well rounded, balanced heat, with fruity undertones.
A light sprinkling is delightful over tomatillos, a delicious combination when rounded off with fresh coriander.
For those who prefer the fleshy texture of whole dried chillies in their dishes, these are also available on the website and sold simply under Chipotle chillies.
