This blend comes from Sri Lanka (Ceylon), and it is an authentic taste of the island. It is a roasted curry powder, which gives it a deep, toasty taste which combines beautifully with the natural aromatic flavours of the spices used. Fish and seafood are staple foods in Sri Lanka, and this blend works wonderfully with them, but it can also be used for meat, chicken and vegetables, also lentils and other pulses. Traditionally the curry is cooked in coconut milk, which tempers and balances the spicy heat, resulting in a medium hot dish. It is usually a ‘wet’ curry, with plenty of sauce, meaning it goes very well with roti, chapati or naan bread to mop up the gravy.
Ingredients: Chilli, Coriander, Fenugreek, Cumin, Fennel, Curry Leaves, Turmeric, Black Pepper, Cloves, Cassia.
