In the Middle East and the Eastern Mediterranean, tahini is as staple as it gets. Made from ground toasted sesame seeds, it has a distinctive and strong flavour, intensely nutty and slightly bitter, oily and earthy, and is used as an ingredient rather than a dish in itself. Tahini is an essential element of the ubiquitous hummus dip common throughout the area, where it intensifies the already nutty flavour of chickpeas. When mixed with Greek yoghurt and a touch of garlic it becomes a zingy, earthy sauce which is served with falafel or kebabs. Due to its deep, earthy character tahini matches perfectly with sharp, citrussy flavours such as lemon juice, and it gets on really well with garlic for the same reasons. Tahini can be used in desserts, and it is often an ingredient of halva. Interestingly, sesame paste (with a different name) is used (mainly as a condiment) in some Chinese noodle dishes.
