Often referred to as one of Britain’s national dishes, the legend goes that this was invented in a 1970s Glasgow Indian restaurant, when a customer asked for some tomato ketchup with his meal! (We emphasise that our tikka masala blend contains no ketchup!!). Whatever the truth of the story, nowadays tikka masala is still the most popular of curries in this country. It is very mild, but full of aromatic flavour and when cooked with cream or yoghurt results in a luxuriously tasty dish. Although it does work best with chicken, it can be used with anything else that takes your fancy. For an extra touch of luxury, stir in a spoonful of ground almonds towards the end of cooking. And don’t forget the naan bread, to mop up the sauce!
