Ingredients
4 medium potatoes, boiled and mashed
100g green peas
1/2 of a cauliflower, cut into small pieces
1 pepper, diced
2 carrots, chopped
3 tomatoes, finely diced
1 tbsp nigella seeds (optional but a nice touch)
chillies, finely chopped (optional)
1 onion, finely chopped
2 garlic cloves, crushed
2-3 tsp Spice Mountain Pav Bhaji Masala
1/2 tsp turmeric
50g butter
salt to taste
Coriander leaves, chopped finely

Method
- Boil cauliflower, peas and carrots until they become soft. Drain out excess water. Heat butter in a pan and saute the nigella seeds, onions, chillies, garlic and the peppers and cook for a few minutes.
- Add the tomatoes and simmer for a further 10 minutes. Add the spices and the rest of the boiled vegetables including the mashed potatoes. Season with salt to taste.
- Cook through and mash the entire mixture with a potato masher when it is boiling. If it becomes too thick, just add a little water. When ready, add a generous knob of butter and stir through.
- To serve, sprinkle with the chopped coriander and some chopped onion. Serve with Indian bread and lemon wedges.
