Ingredients

Boneless pork shoulder
Chicken or meat of your choice
2 tbsp sunflower or veg oil 1 onion
Chopped 3 garlic cloves
Crushed 1 small piece ginger
Minced 3 cups stock (chicken or veg)
2-3 tsp Colombo Powder
2 sprigs fresh thyme or 1 tsp dried
2 bay leaves 1/2 cup chopped tomatoes
Fresh or canned vegetables like sweet potatoes, courgettes, carrots, cut into chunks
1 Tbsp fresh lime juice

Method

  • Heat the oil in a casserole dish over medium heat. Add onion, ginger and garlic and sauté for a few minutes until soft. Add the meat and coat well in the onion/garlic mixture.
  • Add the chopped tomatoes and vegetable of your choice and cook for a further minute. Add the stock and bring to a boil along with the thyme sprigs and bay leaves.
  • Next add the spice blend. Cover and simmer for 30 mins. Uncover and increase the heat to medium and cook for a further 10 minutes. When ready, stir in lime juice and season with salt and pepper.
