Ingredients
2 tbsp oil (sunflower or vegetable is fine)
1 onion
2 garlic cloves
small piece fresh ginger
2 teaspoon Goan Curry spice
1 tomato, chopped finely
1 can coconut milk
tamarind, if you have it
meat or fish of your choice (if using fish a firm white fish or tuna is ideal)
salt to taste
fresh coriander leaves, chopped

Method
- Make a paste by whizzing the onion, garlic & ginger in a blender to achieve a smooth paste. You can add a dash of water to the mixture.
- Heat the oil in a pan and fry the garlic mixture for a few minutes and then add the spices. Fry this mixture until the aromas of the spices fill the air. You may need to also add a few drops of water at this point to prevent the mixture from sticking to the pan. Next add the freshly chopped tomato and cook until the mixture is mostly dry.
- Add the meat and coat well in the spiced mixture. Once the meat is browned add the coconut milk and the tamarind and cook until the meat is cooked. (if using fish add this in the last 10minutes of cooking)
- Taste for seasoning. Garnish with fresh coriander leaves.
