Ingredients
2 tbsp oil
2 medium onions, chopped (or whizz in a blender to make a smooth paste)
2 cloves garlic, crushed
1 sweet red pepper, diced
2 tsp Spice Mountain Jalfrezi spice blend
Your choice of meat, chicken or beef pieces
400g tin Chopped Plum Tomatoes
50ml water
1tbsp tomato puree
Salt to taste
Freshly chopped coriander leaves

Method
- Heat the oil in a pan and saute the onions, garlic and pepper until the onions become soft and translucent. Add the spices and coat well in the above mixture.
- Add the meat pieces and fry until the meat is browned all over and well coated in the spicy mixture.
- Add the tomatoes and the water. Cook for 20 minutes then add the tomato puree and continue to cook until the meat is properly cooked and the sauce has reduced and thickened.
- Taste and adjust seasoning. Stir in the fresh coriander and a few more over the top of the sauce to garnish. Serve with basmati rice or naan bread.
