Ingredients
500g meat of choice
Butter or 2 tbsp oil
1 onion, chopped
2 garlic cloves, crushed (or 1 tsp garlic paste)
Small piece ginger (or 1 tsp ginger paste)
2-3 tsp Karachi spice
2 large tomatoes, chopped
1 cup water (or a bit more if more sauce required)
Freshly chopped coriander

Method
- Heat oil/butter in pan and gently fry the onion until they turn golden brown (about 10minutes) then add the garlic & ginger and continue to fry for another 5 minutes.
- Add the tomatoes and spices and fry this mixture on a higher heat for another 10minutes. Turn the heat down slightly if the mixture starts to splatter.
- Add the meat and water and cook for a further 30minutes or until the meat is cooked. Adjust seasoning, sprinkle chopped coriander over the curry and serve with naan bread or basmatic rice.
