Ingredients

1 large onion, chopped
3cm piece of fresh root ginger, chopped
2 chillies (optional, if you want it HOT or you can deseed them first for less heat)
1 tbsp vegetable or sunflower oil
2-3 tsp Spice Mountain Keralan Curry spice
meat of your choice, fish (cut into bite sized chunks) or jumbo prawns are especially delicious in this recipe
1 can coconut milk
2 tbsp tamarind water (this is a fantastic ingredient that will enhance this dish)
Freshly chopped coriander

Method

  • Make a paste by blitzing the onion, ginger, and chillies in a food processor and adding a little bit of water to get a nice consistency (about 2-3 tbsp)
  • Heat in oil in a heavy based pan, when hot fry the spice mix for just a few seconds. Add the onion mixture and continue frying for about 5 minutes on a lower heat. If it starts to stick to the pan, just add some water.
  • Add in the meat, coconut milk and the tamarind water and simmer until the meat is cooked through (prawns and fish only need 2-3 minutes)
  • Taste for seasoning & sprinkle over the fresh coriander before serving.
