This lovely salad of potato and tuna is one of the most popular tapas in Spain’s Cadiz province, as it stars three of the area’s best ingredients. Canned tuna is of really good quality in Spain, and much of it comes from Cadiz. The recipe also features sherry vinegar, made in the nearby city of Jerez. This has a unique flavour all of its own, sweet and rich. The area is also known for its potatoes and the three ingredients marry together so well; the acidity of the vinegar, the starchy potatoes and the fresh, meaty tuna making a satisfying and tasty salad.

Ingredients

2 Potatoes, peeled and cut into large dice
1 Onion, finely diced
2tbs Flatleaf Parsley, chopped
2tbs Extra Virgin Olive Oil
1tbs Sherry Vinegar
1tsp Patatas Bravas blend
1 good quality can of Tuna
2 Hardboiled Eggs

Method

Boil the potatoes until just tender, then allow them to cool a little.
Place the cooked potatoes into a large bowl, then add everything else except the tuna. Season with salt and pepper, and then give everything a good stir, getting all the ingredients combined. Let the salad sit for half an hour to take on the flavour of the dressing, and finally add the tuna, flaked over the salad. Garnish with the hard-boiled eggs, quartered, and serve with some warm crusty bread.
