Ingredients

1 leg of lamb
2 tbsp ras el hanout
Juice of 2 lemons
2 garlic cloves crushed
A good glug of olive oil
Bunch fresh coriander chopped

Method

  • Mix all the ingredients together and rub all over the lamb (make small incisions in the lamb and fill them with the mixture). Marinate overnight then roast in the oven.
  • Add ½ tsp to a cup of rice or couscous to transform the ordinary. Rub on pan-fried or baked chicken. Cook roasted vegetables with a glug of olive oil, some rosemary sprigs or thyme and a sprinkle of ras el hanout. Add ½ tbsp to soups, stews and casseroles.
