While we agree that one of the best things to do with a red cabbage picked straight from the garden is not to cook it at all and just eat it neat, if you are going to cook with this delightful vegetable this recipe is a real winner. Slowly braised with ginger beer, spiced with coriander seed, star anise and fresh ginger, sweetened with apple and brown sugar, the cabbage takes on all the flavours and makes a great accompaniment to roast pork or duck. If you can find the Australian Bundaberg brand of Ginger Beer this works best, but any will do.

Ingredients
1 Red Cabbage
1 red onion, finely sliced
1 large eating apple, cut into wedges
3in piece of fresh ginger, peeled and grated
50g butter
100ml vegetable stock
1 330ml can of Ginger Beer
1/2tbs brown sugar
2tsp coriander seed, crushed
1 star anise
2tbs cider vinegar

Method
Slice the red cabbage and red onion, then simply place these and all the other ingredients in a lidded oven dish. Braise in the oven on a low heat (140c) for an hour or so, then remove the lid from the dish. Check the seasoning, adding salt and pepper if required, then turn up the oven to 180c and cook for a little while longer, until the liquid has reduced slightly.
