Orange zest has such a delightful flavour, bittter and tart with a deep underlying sweetness, and this freeze-dried zest is a great way to have this flavour handy. It can be used anywhere freshly-grated zest would be used, to boost an orange sauce, to make a refreshing sorbet, even to make your marmalade even more orangey! It is particularly useful in baking, and also to make the sauce for duck a l’orange (or for that matter crepes suzettes). A touch added for the batter for a madeira cake will transform it, and perhaps our favourite is using it in those lovely orange and polenta (sometimes rice flour) cakes that are popular in southern Italy and Greece. All in all a great way to have the versatile and distinctive flavour of orange zest available whenever you need it!
