Also commonly known by its Indian name, Methi, this is one of India's most commonly used herbs and is particularly used in North Indian cooking. It has a smoky, earthy and slightly bitter flavour. It is used in much the same way as coriander leaf, although it should be noted that its flavour is more dominant. Add towards the end of the cooking process to make the most of its flavour.
