Fennel seeds have a clean, aromatic anise-like or slightly liquorice flavour. The seeds are particularly good with pork and seafood. Toasting the seeds before adding to foods brings out the sweetness of this spice. They can also be crushed in a mortar & pestle for a much fuller flavour. Use in Italian dishes, for poaching fish or as a seasoning in breads & cakes. Fennel seeds are also delicious added to teas.
